In the Cellar: A new winery under construction<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
\n\t\t\t\t
\n\t\t\t\t\t\t\t\t\tIn June 2024, we began construction of a new winery dedicated to the vinification of our red, ros\u00e9, and white wines. This modern building will overlook a semi-underground aging cellar, designed to optimize both the aging conditions and the precision of our winemaking techniques.

One of the key goals of this project is to rethink the journey of the grapes \u2014from the vineyard to the fermentation tanks\u2014by implementing a gravity-flow reception system. By replacing tractor bins with smaller containers, we reduce mechanical stress on the berries, preserving more freshness, finesse, and fruit expression.

This new facility will also enable us to increase our parcel-based vinification. By working with smaller volumes, we can deepen our understanding of each plot’s potential and fully reveal the aromatic identities of our various grape varieties.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
